Salt Salt Seasoning

 

Salt is divided into two functions: 

1. Salt crystals - a chemical that integrates multiple flavors and tastes while acting as a Major transformer

2.  Liquid finishing salts - a diluted crystal salt with liquid; including food processing of vegetables, grain, and beans as in Miso, tamari-shoyu, umeboshi, sauerkraut, brines, rejuvelac etc.
