This term indicates a concentrated sugar-like ingredient. Not simply that onions become sweet when cooked a long time. Rather the term identifies different kinds of sugar for example:

cane
maple syrup and crystals
fruit and fruit juice
malts: rice, barley, corn, sorghm, molasses
palm sugar
date sugar
